Strawberry & lemon éclair

You will need

  • 500g of crunchy strawberry filling
  • Choux pastry
  • Lemon Cream
  • Whipped cream
  • Pieces of strawberry

1 CHOUX PASTRY

Prepare the choux pastry and bake the eclairs.

Slice the top quarter off the eclairs.

2 CRUNCHY FILLING

Reheat silghtly the strawberry filling in a microwave or bain-marie, then spread it on a sheet.

Once cooled, cut rectangles at the size of the éclairs and put them at the bottom.

3 LEMON CREAM

Prepare a lemon cream. Use a piping bag to fill the eclairs with the lemon cream, then put back the top slice.

4 PRESENTATION

Prepare a whipped cream then squeeze it over the eclairs using a piping bag. Decorate the eclairs with a few pieces of strawberry and place in the fridge until you are ready to serve.
