Su <strong data-start=\"221\" data-end=\"247\">bizcocho de cacao<\/strong> va acompa\u00f1ado de una <strong data-start=\"266\" data-end=\"307\">rebanada de haba oscura crujiente<\/strong>, una <strong data-start=\"314\" data-end=\"342\">intensa cereza confitada<\/strong>, una <strong data-start=\"350\" data-end=\"382\">cremosa mousse de chocolate<\/strong> y una <strong data-start=\"392\" data-end=\"412\">ligera nata montada<\/strong>. El conjunto se realza con un <g id=\"gid_6\">glaseado de chocolate negro al estilo Rocher<\/g> y una <g id=\"gid_7\">ganache de chocolate y vainilla<\/g>. Una refinada creaci\u00f3n que combina dulzura, crujiente e indulgencia.   <\/p>\n<h3>MONTAJE Y ACABADO<\/h3>\n<p><img decoding=\"async\" src=\"https:\/\/www.unipatis.fr\/wp-content\/uploads\/2025\/10\/Buche-foret-noire-1.png\" alt=\"\" width=\"220\" height=\"150\"><\/p>\n<p>1. Mezcla los polvos (az\u00facar glas, harina y flor de sal) en un cuenco, incorpora la clara de huevo, vierte sobre los polvos y mezcla con una batidora de reposter\u00eda durante 30 segundos. Por \u00faltimo, a\u00f1ade la mantequilla de avellana y vuelve a mezclar.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.unipatis.fr\/wp-content\/uploads\/2025\/10\/Buche-foret-noire-2.png\" alt=\"\" width=\"220\" height=\"150\"><\/p>\n<p>2. Deja enfriar, da la vuelta a la galleta y retira la primera piel. Cambia el tama\u00f1o a 600&#215;400 mm. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.unipatis.fr\/wp-content\/uploads\/2025\/10\/Buche-foret-noire-3.png\" alt=\"Bosque negro log-3\" width=\"220\" height=\"150\"><\/p>\n<p>3. Extiende el crumble sobre la galleta con una esp\u00e1tula angulada.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.unipatis.fr\/wp-content\/uploads\/2025\/10\/Buche-foret-noire-4.png\" alt=\"Bosque negro log-4\" width=\"220\" height=\"150\"><\/p>\n<p>4. Mezcla la gelatina vegetal con el chocolate, cali\u00e9ntalo a 80\u00b0C y luego red\u00facelo a 50\u00b0C. Al mismo tiempo, monta la nata fr\u00eda (espumosa, no dura). A\u00f1ade la nata espumosa a la gelatina en 3 tandas. Extiende inmediatamente. Calienta el glaseado a 40\u00b0C al ba\u00f1o mar\u00eda o en el microondas.
