Coconut Mirror Glaze

Pure fruit glaze with coconut puree (20%).

Gelled with fruit pectin.

Shine and texture stable in the freezer and thaw. For entremets, mousses, bavarois, ice creams and cocktail verrines.

Ready to use, Melt at 45° / 50°C in a bain-marie. Pour over frozen entremets (without frosting) or smooth with a single stroke of the palette knife.

Protect from light and humidity (R.H. max.70%) in a clean room, at a temperature between min. 4°C and max. 20°C. Sensitive to strong odors. Keep refrigerated after opening and consume within two weeks.
