Neutral Mirror Glaze

Our must-have neutral icing gelled with fruit pectin. Icing for entremets, mousses, bavarois, ice creams and fruit tarts. For hot use.

Texture stable in freezing and thawing. For entremets, mousses, bavarois, ice creams and cocktail verrines.

Ready to use. Melt at 45° / 50°C in a bain-marie or microwave oven in defrost mode. Spread with a spatula, smoothing with a single paddle movement, or pour over frozen entremets (without frosting).

Protect from light and humidity (R.H. max.70%) in a clean room, at a temperature between min. 4°C and max. 20°C. Sensitive to strong odors. Keep refrigerated after opening and consume within two weeks.

12 months closed packaging from date of manufacture. We guarantee 3⁄4 of the DDM on delivery and minimum/month.
