Cracker puffs with our crunchy red fruit insert and creamy vanilla mousse.

Red fruit crisp: Place the red cracker on the choux and place in the oven.

Warm the croustillant slightly in a bain-marie or in the microwave, then spread it out (approx. 3mm thick) on a baking sheet. Cut out circles the size of the choux, then fill the bottom of the choux with the croustillant.

Poach the vanilla cream. It is important that the vanilla cream is very cold before use.

Poach the whipped cream last.
