High concentration, economical glaze. Shinny, it revives and protects fruits from oxidation and dehydration while enhancing the taste of tarts. Gelifies quickly, texture stays stable frozen and defrosted.
Intense Neutral Glaze (40-60% dilution)
Traditional concentrated glaze for fruit tarts, hot use.
Dilution 40%.
Color : Neutral
Add 40 to 45% water or fruit juice to the glaze. Heat over low heat until simmering (do not boil). Let stand for 2 minutes then brush on topping. Can be reheated several times.
Keep away from light and humidity, at room temperature. 12 months in unopened package. 3 weeks in the refrigerator after opening.
