Milk Chocolate Glaze

Glossy glaze made from dark and milk chocolate, dairy cream and cocoa paste for entremets, mousses, bavarois and ice cream.

Gelled with fruit pectin.

Stable texture for clean cutting on all types of surfaces (domes, Yule logs). Perfectly suited to freezing and deep-freezing, retaining the same shine. Will not crack when frozen.

Ready to use. Melt at 45° / 50°C in a bain-marie or microwave oven in defrost mode. Spread with a spatula, smoothing with a single paddle movement, or pour over frozen entremet (without frosting).

Protect from light and humidity (R.H max.70%), at temperatures between min. 4°C and max. 20°C. Sensitive to strong odors. 8 months closed packaging / 3 weeks refrigeration after opening.

Pails of 1kg, 2kg or 6kg.
