Rocher-style icing – Halloween Passion Flavor

Ready-to-use matte chocolate glaze with Rocher-style caramelized hazelnut flakes. Pure chocolate, palm-oil free.

A unique ready-to-use glaze with an opaque, matte texture, enriched with Rocher-style caramelized hazelnut chips. Formulated with pure white chocolate cocoa butter (71%), without palm oil, it guarantees a high-end visual effect and perfect adhesion to entremets, cakes and ice creams. Freeze- and thaw-stable, it offers long-lasting shine and incomparable crispness.

Melt at 40°C, then pour or dip your frozen entremets, travel cakes, choux or ice creams. For best results, take frozen entremets out of the freezer 10 minutes before glazing to avoid condensation. This versatile glaze can be used on both individual desserts and logs, for an elegant, gourmet "Rocher" effect.

Shelf life 12 months from date of manufacture, protected from light, heat and humidity (15-20°C / R.H. max 70%). Sensitive to strong odors. After opening, keep for 3 weeks in the refrigerator (0-4°C). Freeze-thaw stable.

Available in airtight buckets for easy, hygienic use. Net weight: 5 kg. Also available in formats adapted to the needs of artisan bakers and industrialists. Made in France, with support for the BOS - Orangutans of Borneo foundation and palm-oil-free certification.
